PATATAS A LA RIOJANA


Ingredients (serves 4):

  • 1 kg. Potatoes
  • 300 gr. chorizo
  • ½ kg. Tomatoes
  • 3 green or red peppers
  • ½ kg. Onions
  • Red chili
  • Meat and vegetable soup
  • Salt
  • Olive oil

Preparation:

Peel and cut the potatoes in big pieces. Cut the chorizo in big slices and fry it in a pan with olive oil, then put it to one side. Fry the chopped onions in the same oil and once turned golden, add the tomato. Then put the potatoes and stir-fry them. Add again the chorizo and the pepper (cooked and cut into strips before) Pour in two big cups of soup, salt it and simmer until the potatoes are tender.

If necessary add more soup (but not too much) The Red chili is optional. If you add it, put it together with the pepper.
